Zucchini Pizza Bites


  • 4 Zucchinis
  • Large 29oz can of Tomato Puree
  • Oregano (dry)
  • Basil (dry)
  • Granulated Garlic
  • Granulated Onion (optional)
  • Salt
  • Pepper
  • Sugar
  • Pepperoni, Mozzarella Cheese, and anything else you put can put on a tiny pizza.

Serves 4

This is from various sources so nothing really has a measurement.  Just add as much of each ingredient  as you think it needs.

In a small pot, add garlic, oregano, basil (add more of this), salt, pepper, sugar and onion.  Heat on medium for 5 – 10 minutes.

Pre-heat oven to 400 degrees.  Cut the zucchini into circle slices.  Place on a large pan.  Using a regular spoon, place the sauce on each zucchini.  Then add the cheese and pepperoni.  Heat in the oven for 16 minutes for 1 pan,  maybe longer for 2 pans.

What we did was make all the sauce and used 2 zucchinis.  Refrigerated the sauce to use for the next day to make more.

Instead of Zucchinis, or to add variety, squash and eggplant can be used.  Zucchinis are the best tasting though.
